Can I use my W2 Income (Less than 1 Year at Job) towards home loan?

Looking to get a construction to a permanent home loan.

Wife has been working for almost 1 year at her job. Before that she was unemployed.

I will be starting a Job this month. Been unemployed before this.

At what point can I use the income from our jobs for a loan. I heard it was 2 years but do they make exceptions, if so what would that be?
